About Chef Rolex

Vagabond Quizine was founded by Chef Rolex Augustin as a celebration of food, family, and cultural heritage. His love affair with cooking began in Haiti, where flavors told stories and meals brought people together. One unforgettable morning at age five, he tasted his grandmother’s spaghetti—served for breakfast and packed into a Superman lunchbox. That dish wasn’t just delicious; it was transformative.

“That spaghetti changed my life,” Chef Rolex recalls. “I’m still chasing my grandmother’s food. That’s what drives me.”

From that moment on, Chef Rolex has been on a mission to recreate the magic of that memory, blending Haitian heritage, African American culinary tradition, and global inspiration into every dish he serves. His journey has taken him from kitchens across NY and NJ to celebrations in cities like Atlanta and Miami, and internationally in Colombia, Costa Rica, St. Maarten and the Dominican Republic—always bringing flavor, heart, and connection to the table.
